Etymology

Unadapted borrowing from Spanish escabeche, from Andalusian Arabic اَلسُّكَّبَاج (assukkabáj), from Arabic اَلسِّكْبَاجَة (as-sikbāja), feminine of سِكْبَاج (sikbāj), from Middle Persian [script needed] (*sḵbʾk' /⁠*sikbāg⁠/) (whence Persian سکبا (sekbâ)). Possibly related to ceviche. Doublet of caveach and sikbaj.
